If you are starting, I would suggest Lather. It's a 3 disc set that encompasses much of his mid-70's work. It's got the right combination of accessible stuff and really brilliant oddball stuff to give a good representation of what Zappa was about.

agree with "In the Land of Grey and Pink."

Camel you are okay with any of there 70's album except the live one. Favorites are The Snow Goose, Mirage, Moonmadness and Rain Dances.

Soft Machine-hard to say they changed alot with each album. Try either Vol 2 or fourth. Third is my favorite but I wouldn't start with it.

I'm still going to pitch Nektar's Remember the Future and Tab in the Ocean to you. Honestly, you are looking at a bunch of prog and I seem to know your taste. These albums should be on your watch.
